Lilac Syrup

We had a group of friends in from the US to help us with projects around the hotel. With an abundance of lilacs we decided to harvest the blooms and make lilac syrup, the kitchen was filled with the perfume of purple flowers.

We made a simple syrup of 1 cup water to 1 cup sugar. Added lilac blossoms and simmered for 10-15 minutes. Then added a blueberry for a pink hue and a teaspoon of lemon juice.

SO LOVELY!

1 quart lilac blossoms, tightly packed

2 cups sugar

2 cups water

3-4 blueberries

2 teaspoons fresh lemon juice
